Thai Chicken in Green Curry Paste

Curry is a favorite dish in Thai restaurants throughout the world and for good reason. Based on a delicious paste of fresh and dried herbs and spices, curry is unique and unlike any dish in Western cuisine. The endless combinations and fresh taste make curry a popular dish.


Ingredients
500 Gms Boneless-Chicken 
50 Gms Green Curry Paste
1 Onion
1 Small Egg-Plant (Quartered)
½ Cup Peas
1-2 Cups Thick Coconut Milk
3 Cups Chicken Stock (you can substitute this with 4-5 chicken cubes)
2 Tsp Fish Sauce
2 Pinches of Palm Sugar
1 Tsp Lemon juice
2 Tsp Oil
Salt to Taste

Method
1. Heat oil in a wok. Add the onions and fry till light pink (please check the note below).
2. Add the green curry paste (I used a ready-made packet of green curry paste however, if you wish to use fresh paste which is usually preferred, I have provided the recipe for it).

3. Add the coconut milk and stir. Let it boil. Add the chicken stock/chicken cubes and the chicken. Add the egg-plant, peas and cook till chicken is tender.
4. Add the Fish sauce, palm sugar and lemon juice.
5. Cook it on medium flame till the chicken and the vegetables are completely cooked and oil floats on top.
6. Adjust salt.
7. Serve hot with jeera rice or naan.

For the Green Curry Paste

Ingredients
2 Green Chilies
1 Inch Galangal
2 Stalk Lemon Grass
4-5 Tbsp Coriander Leaves (Chopped)
2 Tsp Cumin Seed
3-4 White Peppercorns
1 Tsp Chopped Coriander Root (or substitute coriander stems if unavailable)
¼ Tsp Lemon Rind
1 Tbsp Lemon Juice
6-7 Basil Leaves

Method
1. Mix all the above ingredients into a fine past with little water.

Note: I added the onions with the gravy but if you want an original form of Thai curry, fry the onions in oil and when they are light pink, remove and grind it into a paste. Fry this paste again in the same oil and then continue as from point no.2.

Fresh Lemon Mousse

Ingredients
3 Whole Eggs
3 Eggs (Separated)
1½ Sugar
2 Tsp grated lemon zest
½ Cup Freshly Squeezed Lemon Juice (4 lemons)
Kosher salt
1 Cup Heavy Cream
½ Cup Bottled Lemon Curd (at room temperature)
Sweetened Whipped Cream, Recipe follows
Sliced Lemon for Garnishing
For the Sweetened Whipped Cream
1 Cup Cold Heavy Cream
1 Tbsp Sugar
½Tsp Pure Vanilla Extract

Method
  1. Sweetened Whipped Cream: Place the cream, sugar, and vanilla in the bowl of an electric mixer fitted with the whisk attachment. Whip on medium and then high speed until the cream just forms still peaks. Spoon the whipped cream into a pastry bag fitted with a large star tip.
  2. In a large heat-proof bowl, whisk together the 3 whole eggs, 3 egg yolks, 1 cup sugar, the lemon zest, lemon juice, and a pinch of salt. Place the bowl over a pan of simmering water and cook, stirring constantly with a wooden spoon, for about 10 to 12 minutes until the mixture is thick like pudding. (I change to a whisk when the mixture starts to get thick.)
  3. Take off the heat and set aside for 15 minutes. Cover with plastic wrap directly on the surface and refrigerate for 1 to 2 hours, until completely chilled.
  4. Place half the egg whites and a pinch of salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on high speed. Add the remaining 2 tbsp sugar and continue to beat until the whites are stiff and shiny.
  5. Carefully fold the beaten whites into the cold lemon mixture with a rubber-spatula.
  6. Place the cream in the same bowl of the electric mixer fitted with the whisk attachment (no need to clean the bowl) and beat on high speed until the cream forms stiff peaks.
  7. Carefully fold the whipped cream into the lemon mixture. Fold in the lemon curd, and pour into a 7-inch-diameter, 3-inch-deep soufflé dish. Decorate with sweetened whipped cream and lemon slices that have been cut into quarters.
  8. Chill and serve cold.

Rice Kheer

This is a quick and simple way of making tasty rice kheer.


Ingredients
½ Cup Rice (Soaked Over-night)
3 Tbsp Condensed Milk
¼ Tsp Cardamom Powder
3-4 Pinches Saffron
13 Tbsp Evaporated Milk
4 Tbsp Mava/ Khoya/ Powdered Milk
2 Cups whole Milk
2-3 Pinches Nutmeg Powder
1 Tsp Custard Powder

Method
  1. Bring the soaked rice to a boil, add the cardamom and a pinch of the saffron, keep the heat on very low and let the rice cook until it's quite over-cooked. Do not stir it during this stage, just let it boil. Only stir if you absolutely have to, like if one side is getting drier than the other, then give it a gentle stir.
    Once the water is almost completely gone and the rice grains are really soft and long, turn off the heat and let the rice cool for 15mins. Then add the 2 cups milk and nutmeg powder, and then grind it all in your blender or processor until almost completely smooth.
  2. Pour this mixture back into the pan and add the evaporated milk, sugar, condensed milk and custard powder. Bring to a boil but on low heat, stirring often to make sure it doesn't stick to the bottom of the pan.
  3. Add the grated mavo/khoya or powdered milk. Simmer for a few more minutes whilst stirring.
  4. Garnish with flaked almonds and pistachios, and some pooris on the side.

Prawns In Hoisin Sauce

Prawns in Hoisin Sauce is similar to stir-fry prawns. Hoisin sauce is a sweet n sour Chinese sauce. The word hoisin is a romanization of the Chinese word for seafood "海鮮" as pronounced in Cantonese. Hoisin sauce ingredients include starches such as sweet potato, wheat or rice, and water, sugar, soybeans, white distilled vinegar, salt, garlic, red chili peppers, and sometimes preservatives or coloring agents. Traditionally, hoisin sauce is made using sweet potato. Despite the literal meaning of "seafood", hoisin sauce does not contain fish.
This is a quick recipe and one has the freedom to add their own veges like carrots, mushrooms, broccoli, sweet-corn, etc. It serves as a wonderful starter and goes well with garlic bread. 
Ingredients
500 Gms Prawns (Peeled and de-viened)
1 Tsp Olive Oil
3-4 Garlic Cloves (Chopped)
3 Spring Onions (Chopped)
½ Cup Green Peas (Boiled)
1 Medium Capsicum (Cut in squares)
3 Green Chilies (Cut in slices)
½ Cup Baby Corn-Optional
2 Tsp Hoisin Sauce
1 Tsp Hot Chili Sauce
1 Tsp Honey
½ Tsp Soya Sauce

Method
  1. Heat olive oil in wok. Swirl it around. Add the garlic, green chilies and fry them for half a minute
  2. Add spring onions and capsicum and mix till they are soft. Take it off the pan.
  3. Add the prawns to the pan. Allow to cook from one side then flip it and let it cook from the other side.
  4. Add all the veggies, soya sauce, hoisin sauce, Chili sauce and honey to the prawns and mix for about 4-5 minutes. Adjust salt.
  5. Serve hot with some french fries or sliced tomato on the side with Garlic Breads.

Hint: You can add your own veges like carrots, broccoli, mushrooms, etc.
If you want to save time and effort boil the prawns in microwave.

Chicken Curry in Coconut Milk

This is a fantastic chicken curry that can be made on any occasion. It tastes similar to butter chicken and that’s what makes it tasty. You can also make it with boneless chicken. Enjoy this delicacy with parathas, naan or rotis.

Ingredients
1 Whole Chicken
1 Tsp Ginger-Garlic Paste
50 Gms Butter
1 Onion-Optional (Chopped)
2-3 Green Chilies
1 Cup Thick Coconut Milk
½ Cup Tomato Ketchup
2 Tbsp Cashewnut Paste
1 Tbsp Kasuri Maithi
1 Tsp Turmeric Powder
1 Tsp Coriander Powder
1 Tsp Cumin Powder
½ Tsp Red Chili Powder
¼ Tsp Garam Masala Powder
1 Tsp Chicken Masala Powder (Tandori Masala will also do)
Salt to taste
Coriander Leaves to Garnish (Chopped Finely)

Method
  1. Clean and wash the chicken. Boil it with ginger-garlic paste and little water.
  2. Heat butter in a pan. Add the green chilies. Add the onions and sauté till light pink. Add all the dry masalas.
  3. Add the cashew-nut paste, mix. Add coconut milk and mix. Add the chicken and tomato ketchup.
  4. Let the chicken cook completely till oil floats on top.
  5. Adjust the salt and serve hot garnished with coriander leaves on top.

Red Bell Pepper and French Beans Rice

Ingredients
2 Cups Basmati Rice (cooked)
½ Cup French Beans (chopped)
½ Cup Red Bellpepper (chopped)
1 Onion
2 Whole spices(bayleaves, cloves, cinnamon stick)
½ Tsp Garam masala powder
½ Tsp Cumin Seed Powder
½ Tsp Pepper Powder
5 Curry Leaves
Oil as reqd.
Salt to taste

Method
1. Heat the oil in a pan, add the whole spices n let them fry. Add the chopped onion with 1/4tsp of salt n stir until the onions turns trasnculent.
2. Add the chopped french beans with pepper powder, garam masala powder, cumin seed powder and curry leaves also with enough salt. Stir fry for few minutes or until the oil get separates.
3. Add the chopped red bellpepper pieces n stir just for 2 minutes, redbellpepper pieces should be crunchy.
4. Add the cooked rice to the veggies, toss gently until the rice get well mixed with spices n veggies.
5. Serve hot with papads or anyother side dishes as u desire!

Hint: You can add other veggies of your choice like peas, potatoes, sweet-corn, baby-corn  etc

Dino Blast Birthday Party Theme

The best thing about having a dinosaur party theme is that boys and girls both can have a great time and it is exciting for all kids. Also kids of different age-groups can join in. This theme is a versatile theme that has a lot of scope.
Ideas for Making the Invitation

You can use a cream color construction paper and make a big bone shape. Cut the extra paper and out-line the bone with a marker.
Inside the bone or at the back of the card write the party details. Get this laminated (optional). 
Make a dinosaur out of another brown construction paper or use a print-out of a dinosaur from the net with a mouth open wide. Carefully cut out the extra paper and have a complete dinosaur. Laminate the dinosaur. 
Now place the bone birthday invitation inside the mouth of the dinosaur and stick it with a cello-tape or glue and send the dinosaur invitation.
Another way of inviting would be to send out plastic dinosaurs with the laminated bone invitation (as mentioned above) in their hands or mouth.

Poems for the Invitation:
Get ready Master/Miss. (Guest Name) for a Big Dinosaur Blast as you have been invited for a Dino Blast Birthday Party arranged by the (Your Surname) Family for their son’s/daughter’s (Name)’s (age)th Birthday  at (venue), on (date), from (time).
Be ready for a BIG ROARR and send us a big ROARR to let us know if you will be able to make it before (Date) (i.e 3-4 days before the party) RSVP on (Number) or (email id)….
Don’t forget to get your binoculars, pith helmet and a dinosaur book....!!!

Gifting Ideas
You can gift Dinosaur shaped chocolates, dino dough stamps, dino colouring book, dino scientific explorer kit, etc. fill the goodies in a dinosaur paper bag. You can either make the bag at home or get a paper bag from dollar shop and make dino-cutouts and sitck them in the front. 
Decorate lunch bags with dino stickers.  Add more inside, dino pencil, dino cookies and a cookie cutter, etc


Decoration
1. Create a wild atmosphere with greenery all around the place. Use lots of green, brown and black crepe paper.
2. Hang brown and green streamers from the ceiling. Make tree cut-outs from construction paper. Use brown colour for the bark and green for the leaves. Use green, yellow and brown balloons.
3. Stick dinosaur stickers all over the walls. Also if your have a big dinosaur stuff toy place it at the centre.
4. You can rent a dinosaur jumping castle and place it in the backyard.
5. If you are good at drawing you can draw a huge dinosaur face on construction paper and stick it like it’s popping out of a tall tree.

On the Arrival
Dino Decos: Cut out dinosaur shapes from construction paper.  Let the kids decorate them with lace, glitter, dyed macaroni and rice, felt pens, etc. Make sure you write their names on the back so that you can give it when they leave as a souvenir.

You can also make dinosaur head-gears for the kids and let them decorate it.

Fun Games
1. Dino Awards: You can play the below games keep the winners a secret. After all the games are done ask the guests to sit while you set up a stage for giving away the trophies.
  • Lucky Dino Award: Ask each guest to write their name on a piece of paper (chit) and put it in a jar. At the end of the party ask the birthday to remove one chit and the child whose name is in that chit gets the Lucky Dino Award.
  • Best Hunter Award: Similarly, play treasure hunt by hiding a number of plastic dino’s or dino eggs all around the house the child who finds the maximum dinos get the Best Hunter Award.
  • Loud Roar Dino Award: Similarly ask the kids to Roar like a Dino. Choose the one who roars the loudest and he gets the Loud Roar Dino Award.
  • Fastest Dino Award: Dino Feet Walk Race: Make "dino feet" out of empty cereal boxes.  Lay them flat and cut an X into the top of each so the boys can put their feet in them like shoes. Covered each box with colored funny foam cut into the shape of dino footprints. The boys put their feet into the boxes like a huge pair of shoes.  Give them each a big spoon with a dino egg on it (hard-boiled egg). They have to walk/stomp their way across the room and dump the egg into the nest. You can award the winner for this game as the Fastest Dino Award.
  • Similarly, have the tallest dino award, sharp teeth dino award, healthiest dino award.
  • Try not to repeat any of the award winners.
2. Fossil Dig: Hide plastic bones or use real bones and hide them in sand or plastic childs swimming pool. If using real bones, boil them for 1 and half hour, take off all meat, bake it at 350 degrees for snother one hour and spray primer and paint the bones white. Ask the kids to dig and drill and find dino bones.
3. Hatch the Dino Eggs: You need balloons and plastic dinosaurs to play this. Put a plastic dino in each balloon and blow the balloons prior to the party.
Divide the kids in 2 teams. The two teams have to stand in a line like you stand in relay.. The first child gets his balloon to burst by sitting on it. Only after he is able to burst his egg, will the next child in his team get the chance. The team that has all members burst their eggs first wins.
4. Volcano's: Volcano's are always fascinating. A great, quick, craft for kids is to make their own miniature volcano . Have kids make a mound of sand around a Dixie cup. Let them scoop a couple spoonfuls of baking soda into the cup. Off to the side provide each child with a small cup of vinegar (add some dye for color) and let them pour the vinegar into the dixie cup. AWESOME! 
5. Dino Foot-Print Walk: Make dino foot-prints on paper and stick them on the floor. Play musical chair by playing the Jurassic park track.

6. Bone-Drop: You need a chair, bone-shaped biscuits and 2 bowls to play this game. Place one bowl on a and the other bowl on the floor. Fill the bowl on the floor with biscuits. Make the child kneel and put the biscuits in the bowl on the chair with his mouth without breaking or dropping the biscuit. One drop or break means the child is out. Mark the number of biscuits each child is able to put in the bowl. The one that has max in wins.
7. Dinosaur Tail: An outdoor game that begins like tag. Birthday child is "it". As soon as he/she tags a guest they hold hands and together proceed to tag another guest who joins the link "tail". Keep going until the tail is complete.
8. Pin the Tooth on the Dinosaur: Enlarge an image of an open-mouth Tyrannosaurus Rex. Make enough paper teeth for each child and put their name on front. Blindfold and turn child three times before letting them go. Give a party prize to the tooth that comes the closest.

Food Ideas
1. Chicken Wings: Dinosaurs love to eat chicken so a KFC’s Chicken bucket would be just apt.
2. Mini Burgers: Prepare small burgers for the kids. You can tag it as Mc.Dino.
3. Chocolate Dirt Ice-Cream: Let the kids make their own dirt by topping the chocolate ice-cream scoop with squiggly gummy  worms, choclate chips, rock candy, a spoon full of powder chocolate biscuits.

6. Hard Boiled Eggs: How can we forget the eggs of the Dinosaur? Serve hard boiled eggs in a bowl let the kids pick up one full egg and then you can cut them into four. Sprinkle salt and pepper on top and let the kids enjoy their healthy meal.
7. Dino-Sandwich: Use a dinosaur cutter and make dino shaped sandwiches. You can sprinkle some rice on top of the sandwich that gives it a dinosaur skin. Decorate it with a piece of chicken or fish on the side and top it with some ketchup.
8. Dinosaur Cake: Bake/Order a dino birthday cake.

9. Dinosaur Ice-Cream Sticks: Fill Sprite in ice-cream stick moulds and put a dinosaur shaped jelly bean inside every mould. Freeze this. Give the kids their ice-cream sticks and let them discover their dinosaur.

Corn and Paneer Pulao

Paneer is one of my favorite Indian cuisine ingredient. You can have paneer in any of your dishes and they will taste great. I have added green chutney in this recipe. You can have this pulao with dahi raita, gravy or tomato soup.

Ingredients
150 Grms Cottage Cheese
½ Cup Fresh Mint Leaves
1 Cup Fresh Coriander Leaves
½ Inch Ginger
2 Tbsp Lime Juice
1 ½ Cups Basmati Rice
½ Cup Sweet Corn
3 Green Chilies
4 Cloves
1-2 Bay Leaves
1”Cinnamon
Oil/Ghee as reqd.
Salt to Taste

Method
  1. Mix coriander leaves, ginger and green chillies. Add salt and lemon juice and grind to a fine chutney without adding any water.
  2. Heat oil in a deep non stick pan and at the same time in another pan put 3cups of water for boiling..
  3. Cut the paneer into small pieces.
  4. Add bay leaves, cinnamon and cloves to the oil in the pan and sauté. Add rice to the sauté and mix gently.
  5. Add corn, 3 tbsps green chutney and mix. Add salt, paneer and the boiling water. Stir and cover.
  6. Cook till the rice and corn is completely cooked.
  7. Serve hot with raita, papad or  gravy.

Peach Cobbler

Peach Cobbler is an American Pudding. I have tried this pudding by using canned peaches, however for some fresh fruit lovers you can peel, cut and boil the peaches. This taste great with vanilla ice-cream or whipped cream.

Ingredients for the Batter                  
½ Cup Melted Butter
 1 Cup Flour
1 Cup Sugar
2 Tsp Baking Powder
2/3 Cup Milk (Room Temp.)
1 Egg (Room Temp) (Optional)
¼ Tsp Salt

For the Filling
1 (28 ounce) Can Peaches (Drained)
1 Cup Sugar
½ Tsp Nutmeg
1 Tsp Cinnamon

Method
  1. Melt butter in a 9 x 13 inch pan.
  2. Mix together flour, sugar, baking powder & salt.
  3. Stir in milk & egg.
  4. Pour evenly over melted butter.
  5. Combine peaches, sugar & spices and spread over batter.
  6. Bake 35-45 minutes at 350°F until batter comes to the top and is golden brown.
  7. Serve warm with ice cream or whipped cream.

Crunchy Garlic Chicken

Crunchy Garlic Chicken is a easy and tasty chicken. It serves as a good snack and can be eaten with a salad or ketchup and chutney. You can make this in a lot of ways. As it has butter you can even bake it and it turns out to be nice, crunchy and golden.
Ingredients

2 Skinless chicken breast fillets
1 Clove of Garlic
1 Lemon
6 Saltine Crackers (they are like cream crackers)
2 Tbsps butter
4 Sprigs of fresh Italian parsley
2 Tbsp All-Purpose Flour
1 Large Egg
Oil for Frying
Salt and Pepper to Taste

Method
To prepare your chicken:
  1. Peel the garlic and zest the lemon.
  2. Put your crackers into a food processor with the butter, garlic, parsley sprigs, lemon zest and a pinch of salt and pepper.
  3. Whiz until the mixture is very fine and pour the crumbs on to a plate. Sprinkle the flour on to a second plate.
  4. Crack the egg into a small bowl and beat with a fork.
  5. Lightly score the underside of the chicken breasts.
  6. Put a square of plastic wrap over each one and bash a few times with the bottom of a pan until the breasts flatten out a bit.
  7. Dip the chicken into the flour until both sides are completely coated, then dip into the egg and finally into the flavored crumbs.
  8. Push the crumbs on to the chicken breasts so they stick – you want the meat to be totally coated
To cook your chicken:
  1. You can either bake or fry the chicken.
  2. If baking, preheat your oven to its highest temperature (475˚), place your chicken on a sheet pan and cook for 15 minutes.
  3. If frying, put a frying pan on a medium heat, add oil in a pan and cook the chicken breasts for 4 to 5 minutes on each side, until cooked through, golden and crisp.
  4. Serve hot with ketchup or chutney and a salad dressing on the side.

Corny Paneer Delight

Corny paneer delight is a beautiful dish. I learnt this recipe from my mother and now am glad to pass it on. It serves as a great tea-time snack.
Ingredients
1 Cup Fresh Corn
¾Cup Grated Coconut
¾Cup Sugar
4 Tsp Desiccated Coconut
¼Cup Water
½ Tsp Cardamom Powder
3 Tsp Ghee
A few Almonds (Chopped)

For the Paneer
2 Cups Paneer
¾Cup Sugar (Powdered)
A Few Strands of Saffron

Method
  1. Crumble paneer. Add the powdered sugar and saffron and mix well.
  2. Knead to smooth dough.
  3. Divide the paneer dough into balls and keep aside.
  4. Heat 1 Tbsp ghee in a heavy bottomed pan and fry the grated coconut on slow gas till light brown in colour. Take off the heat.
  5. Grind the corn to make a paste.
  6. Heat the remaining ghee in another pan. Add the fried grated coconut and corn paste and mix. Keep stirringcontinously till the mixture leaves the sides of the vessel.
  7. Add the chopped almonds and cardamom powder and remove from heat.
  8. Keep aside to cool.
  9. Divide the mixture into smaller balls than the paneer balls.
  10. Stuff each paneer ball with the corn-coconut mixture.
  11. Roll each ball in desiccated coconut.
  12. Serve cold.

One Pot Couscous and Chicken

Ingredients
8 Chicken Thighs
2 Tsp Turmeric Powder
1 Tbsp Garam Masala
2 Tbsp Sunflower Oil
2 Onions (Finely sliced)
3 Garlic Cloves (Crushed)
500ml Chicken Stock/ 1Chicken Cube
Handful of Whole Green Olives
1 Lemon Juice
250g Couscous
Zest and Small Bunch Flat-Leaf Parsley
Salt to Taste

Method
  1. Toss the chicken thighs in half the spices and a pinch of salt until completely coated. Heat 1 tbsp oil in a large sauté pan with a lid. Fry chicken for 10 mins until golden brown, turn over, then cook for 2 mins and take off the heat.
  2. Pour the rest of the oil into the pan. Fry the onions and garlic for 8 mins until golden. Stir in the rest of the spices, cook for 1 min. Pour in the chicken stock and the olives. Bring everything to a boil, turn down the heat and add the chicken.
  3. Cover the pan with a lid, simmer gently for 35-40 mins until the chicken is tender.
  4. Put the kettle on, then lift the chicken onto a plate and keep warm. Take the pan off the heat. Stir the lemon juice and couscous into the saucy onions in the pan and top up with enough boiling water just to cover the couscous if you need to. Place the lid back on the pan, then leave to stand for 5 mins until the couscous is cooked.
  5. Fluff through half the parsley and the lemon zest, sit the chicken on top. Scatter with the rest of the parsley and zest before serving.
