Peach Cobbler

Peach Cobbler is an American Pudding. I have tried this pudding by using canned peaches, however for some fresh fruit lovers you can peel, cut and boil the peaches. This taste great with vanilla ice-cream or whipped cream.

Ingredients for the Batter                  
½ Cup Melted Butter
 1 Cup Flour
1 Cup Sugar
2 Tsp Baking Powder
2/3 Cup Milk (Room Temp.)
1 Egg (Room Temp) (Optional)
¼ Tsp Salt

For the Filling
1 (28 ounce) Can Peaches (Drained)
1 Cup Sugar
½ Tsp Nutmeg
1 Tsp Cinnamon

Method
  1. Melt butter in a 9 x 13 inch pan.
  2. Mix together flour, sugar, baking powder & salt.
  3. Stir in milk & egg.
  4. Pour evenly over melted butter.
  5. Combine peaches, sugar & spices and spread over batter.
  6. Bake 35-45 minutes at 350°F until batter comes to the top and is golden brown.
  7. Serve warm with ice cream or whipped cream.

Crunchy Garlic Chicken

Crunchy Garlic Chicken is a easy and tasty chicken. It serves as a good snack and can be eaten with a salad or ketchup and chutney. You can make this in a lot of ways. As it has butter you can even bake it and it turns out to be nice, crunchy and golden.
Ingredients

2 Skinless chicken breast fillets
1 Clove of Garlic
1 Lemon
6 Saltine Crackers (they are like cream crackers)
2 Tbsps butter
4 Sprigs of fresh Italian parsley
2 Tbsp All-Purpose Flour
1 Large Egg
Oil for Frying
Salt and Pepper to Taste

Method
To prepare your chicken:
  1. Peel the garlic and zest the lemon.
  2. Put your crackers into a food processor with the butter, garlic, parsley sprigs, lemon zest and a pinch of salt and pepper.
  3. Whiz until the mixture is very fine and pour the crumbs on to a plate. Sprinkle the flour on to a second plate.
  4. Crack the egg into a small bowl and beat with a fork.
  5. Lightly score the underside of the chicken breasts.
  6. Put a square of plastic wrap over each one and bash a few times with the bottom of a pan until the breasts flatten out a bit.
  7. Dip the chicken into the flour until both sides are completely coated, then dip into the egg and finally into the flavored crumbs.
  8. Push the crumbs on to the chicken breasts so they stick – you want the meat to be totally coated
To cook your chicken:
  1. You can either bake or fry the chicken.
  2. If baking, preheat your oven to its highest temperature (475˚), place your chicken on a sheet pan and cook for 15 minutes.
  3. If frying, put a frying pan on a medium heat, add oil in a pan and cook the chicken breasts for 4 to 5 minutes on each side, until cooked through, golden and crisp.
  4. Serve hot with ketchup or chutney and a salad dressing on the side.
