Celery Rice with Spinach Kebab and Greek Mutton is a wonderful dish. Celery Rice is time-consuming but very simple to make. Cooking I believe needs to be given time and effort if you want your family, friends and guests to enjoy your food make sure you give your cooking enough time. Think about what you want to prepare before hand and do a detailed study about how to go about it in your mind before actually getting into it.
Celery Rice is made in 4 parts. It is an over-all meal which consists of most of the items in a menu starting from starter till the main course. It has a starter-spinach kebab, main course which includes-mutton and rice and salad-carrots. I love being innovative in my cooking while serving I believe is an important part along with the cooking. You should make sure that what ever you cook you spend enough time and effort in displaying your meal in an attractive way. You can serve your dish the way you want. One can use fried onions too along with the carrots. This recipe goes well with tomato soup.
 Ingredients
For the Kebab
½ Bunch Spinach
3-4 Potatoes (Boiled and Mashed)
3-4 Green Chilies (Chopped)
1 Egg
Bread Crumbs as Needed
Oil for Frying
Salt to Taste
Filling for the kebab
1 Onion (Finely Chopped)
½ Cup Mushrooms (Finely Cut)
2 Tbsp Coriander (Chopped)
3 Tbsp Cheese
1 Big Pinch Pepper
Salt to Taste
1½ Tbsp Oil
For the Rice
2 Cups Rice
3 Beaten Eggs
1 Bunch Celery
Oil or Ghee as needed
A Few Celery Leaves
Salt to Taste
For the Mutton
400 Gms Mutton (Boneless)
¼ Kg Tomatoes (Grated)
1 Tsp Soya Sauce
2 Tbsp Vinegar
1 Tbsp Ginger-Garlic Paste
½ Tbsp Chili Paste
½ Cup Grated Carrots to Garnish

Method
  1. For the Filling, Mix all the ingredients from for the filling column. Heat oil in a pan, add all the ingredients and sauté for 2-3 minutes.
  2. For the kebab, Cut the spinach finely and steam. In a bowl, mix the spinach, mashed potatoes, salt and green chilies. Make small cups of the spinach and potato mixture and fill it with a little of the kebab filling mixture and make like a ball.
  3. Dip the ball in beaten egg and then roll on the bread crumbs. Heat oil in a pan and deep fry till golden brown.
  4. For the rice, boil the rice (don’t cook it completely) with salt, water and drain excess water.
  5. Take oil in a vessel and sauté celery leaves.
  6. Add eggs and mix it. Add rice and simmer for 10 mins.
  7. For the mutton, wash and drain the mutton.
  8. In a dekchi, cook the mutton with tomatoes, soya sauce, vinegar, ginger-garlic paste, chili paste and salt.
  9. Take a serving dish, arrange the mutton in the centre, then the rice and finally all around place the kebabs.
  10. Decorate with grated carrots on top.
