The first time I had a baked potato was on the streets of London . It is called jacket potatoes in the UK . It a dish loved by kids.
There are different varieties of baked potatoes like Rocket brad, Brie and Backon Jacket Potato, etc… The UK itself has around 80 varieties.
Well for now I have this one variety of it which I tried and it turned out to be a perfect baked potato dish. If anyone has a different baked potato recipe you are most welcome to post it on my blog.
Ingredients
8 Potatoes
½ Cup Onions (Chopped)
1 Tspn Garlic (Chopped)
½ Cup Sweet Corn
1 Tspn Coriander (Chopped)
1 Tspn Celery (Chopped)
60 Gms Butter
½ Cup Milk
1½ Tbspn Fresh Cream
30 Gms. Grated Cheese
½ Tsp Black Pepper Powder
Pinch of Paprika Powder
2 Tbsp Oil
Salt to Taste
Method
- Wash the potatoes with the skin and wrap in silver foil.
- Preheat the oven to 200 degrees. Keep the potatoes in the preheated oven for 30-40 minutes or till cooked.
- Remove a small bit of paper and skin from the top lengthwise. Make a hole in the potato by scooping out some potato from the centre lengthwise.
- Heat butter in a kadai. Add chopped onions, chopped garlic and chopped celery. Saute till golden brown. Add corn and sauté for 3-4 minutes.
- Add wheat flour and stir. Add cold milk and stir continuously.
- Add salt, black pepper powder and paprika powder.
- Add coriander and finally add the fresh cream. Stir well and allow it to cool.
- Once it is luke warm, put this mixture in the hollow potatoes and top it with grated cheese.
- Bake in the oven till cheese is golden brown.
- Serve hot with ketchup on top.
Note: You can also cut the potato lengthwise and put the filling in the centre either by scooping out some of the potato or just divide it into half depending on the size of the potato.
