Ingredients
1 Cup Rice
2 Onions
¼ Cucumber
2 Lemons
A handful of Chopped Coriander
A handful of Groundnuts
A Handful of Curry Leaves
2-3 Green Chilies
1 Tsp Mustard Seeds (Roasted)
½ Tsp Sugar
¼ Tsp Turmeric Powder
¼ Tsp Asafoetida (Optional)
¾ th Tsp Salt 3 Tsp Sesame Oil
A Few Lettuce Leaves to Serve
Method
- Wash the rice and cook it with salt and enough water till done.
- Chop the onions into thin slices. Chop the fresh coriander leaves and green chilies.
- Squeeze the juice of the 2 limes into the rice and mix and keep aside till the flavour is absorbed.
- Heat oil in frying pan, add chopped onions and fry gently till dark pink.
- Add the asafetida and curry leaves, turmeric powder, green chilies and mustard seeds.
- When the onions start getting brown on the edges add the rice little by little with a fork. Stir-fry till the rice is coloured and slightly dried. Keep aside to cool.
- Add the fresh coriander, ground nuts and cucumber.
- Season to taste with salt and sugar and serve one a lettuce leaf.
